Le Refuge is back for this summer!

It’s a little past 7 p.m., and the terrace at Le Refuge restaurant is slowly starting to come alive. The air has that light, crisp freshness unique to the mountains in summer, and across from the tables, the Vaud Alps stretch out before us. It is here, at Le Refuge, that one of Villars-sur-Ollon’s most beautiful spectacles unfolds: the sun slowly slipping behind the mountains as dinner begins.

From the menu, we start by sampling a few tapas to share, then the plancha takes over: delicate fish and generous cuts of beef, seared just enough to preserve the full intensity of their flavors. Dessert often arrives just as the sky turns pink, and that’s just the way it should be.
